Specials Zhang Ping is a small town near Anxi and famous for its ‘narcissus’ Oolong – shui xian. The leaves are wrapped in wood fibre paper and brought into shape in small wooden boxes. Oxidation then takes place by gently heating the box, paper and leaves. This unique technique provides the unmistakable character. Taiwanese Bao Zhong (Pouchong) is based on the Zhang Ping Shui Xian technique, although without being pressed. Every year there is a big competition in Zhang Ping for the best small ‘tea cushions’.
